  • 2 heads broccoli (about 1.5 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1011 strips cooked turkey bacon (or substitute crispy chickpeas for a vegetarian option)
  • 1 and 1/4 cups Miracle Whip OR mayonnaise
  • Zest from 1 lemon
  • 1 tablespoon lemon juice
  • 2 tablespoons white grape juice vinegar
  • 1/4 cup sugar
  • 1 and 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Cook turkey bacon in the oven until crispy. Let it cool before chopping.
  2. In a bowl, whisk together Miracle Whip (or mayonnaise), lemon zest, lemon juice, white grape juice vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper to create the dressing.
  3. Chop broccoli into small florets and add to the dressing along with cranberries, sunflower seeds, cheese, and most of the turkey bacon. Mix well.
  4. Chill for at least an hour before serving to allow flavors to meld.
