  • 1 tablespoon olive oil
  • 1/4 red onion (sliced)
  • 4 slices sourdough bread
  • 2 tablespoons soft butter (for brushing)
  • 4 tablespoons fig butter or jam
  • 5 ounces brie cheese (thinly sliced)
  • 1 large Granny Smith apple (thinly sliced)
  • 1/2 cup baby arugula

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced red onions and caramelize for about 5 minutes.
  2. Generously butter the outside of each slice of sourdough bread. Spread fig jam on the inside of each slice.
  3. Layer brie cheese, apple slices, caramelized onions, and arugula on one slice before topping with another.
  4. Grill the sandwich in a nonstick skillet over medium-high heat for 2-3 minutes on each side until golden brown and the cheese melts.
