  • 2 tablespoons kosher salt
  • 2 teaspoons freshly cracked black pepper
  • 2 medium yellow onions (chopped)
  • 3 medium carrots (chopped)
  • 6 garlic cloves (minced)
  • 2 tablespoons tomato paste
  • 2 cups apple vinegar
  • 4 cups beef broth
  • Fresh herbs (thyme and rosemary)

Instructions

  1. Season the short ribs with salt and pepper; set aside.
  2. In a large pot, cook sliced bacon until crispy. Remove and set aside.
  3. Brown the short ribs in the bacon grease over medium-high heat; set aside.
  4. Sauté onions and carrots in the pot for 3-4 minutes until softened.
  5. Stir in minced garlic and tomato paste; cook for another minute.
  6. Pour in apple vinegar; simmer for 5 minutes to reduce.
  7. Add short ribs back to the pot with beef broth, bacon bits, and herbs. Cover and cook on low heat for 2 to 2½ hours until tender.
  8. Remove herbs, skim fat if needed, and serve over mashed potatoes with sauce.
