  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about 1½ pounds)
  • 2 medium peaches (pitted, thinly sliced)
  • Fresh parsley (for garnish)

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, garlic, salt, pepper, and red pepper flakes.
  2. Reserve half the marinade and marinate salmon fillets in the remaining mixture for at least 30 minutes.
  3. Preheat your oven to 375°F.
  4. Sear marinated salmon skin-side up in an oven-safe skillet for 2-3 minutes.
  5. Flip the salmon to skin-side down, add sliced peaches around it, and pour reserved marinade on top.
  6. Bake in the oven for 12-15 minutes until the internal temperature reaches 145°F.
  7. Garnish with fresh parsley before serving.
