  • 250 g digestive or graham crackers
  • 300 g fresh blueberries
  • 800 g full-fat cream cheese
  • 200 g sour cream
  • 260 g granulated sugar
  • 75 g butter
  • 4 large eggs
  • 1 tbsp granulated sugar
  • 1 tbsp all-purpose flour
  • 2 tsp lemon juice
  • 110 g all-purpose flour
  • 80 g dark brown sugar
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F). Crush the digestive crackers and mix them with sugar and melted butter. Press into the bottom of a springform pan.
  2. Toss blueberries with sugar, flour, and lemon juice in a bowl. Set aside.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in sour cream, cornstarch, vanilla extract, and eggs one by one until combined.
  4. Layer half of the cheesecake filling over the crust, followed by half of the blueberry mixture. Repeat the layers.
  5. Bake for about 85 minutes until set but slightly jiggly in the center.
  6. Cool at room temperature before refrigerating for at least four hours or overnight.
