Ingredients

Scale
  • 1 cup glutinous rice flour (mochiko)
  • 1/4 cup sugar
  • 3/4 cup milk (or plant-based milk)
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • Cornstarch or potato starch (for dusting)
  • 1/2 cup cream cheese, softened
  • 1/4 cup heavy cream (or coconut cream)
  • 2 tablespoons powdered sugar
  • 1/4 cup fresh blueberries (plus extra for topping)
  • 1 teaspoon lemon juice

Instructions

  1. In a microwave-safe bowl, combine glutinous rice flour, sugar, milk, vanilla extract, and salt. Mix until smooth.
  2. Cover loosely with plastic wrap and microwave for two minutes. Stir and microwave for another minute until thick.
  3. Dust a clean surface with cornstarch, then transfer the cooked dough to cool for a few minutes.
  4. In another bowl, beat softened cream cheese until fluffy. Add heavy cream, powdered sugar, lemon juice, and mashed blueberries; mix until smooth.
  5. Once cool enough to handle, divide mochi dough into portions and flatten each piece into circles.
  6. Spoon filling into each circle's center and seal edges tightly to form buns.
  7. Place seam-side down in a container, top with blueberries or chocolate if desired, then chill for 15 minutes before serving.
