  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup Greek yogurt
  • 1 ½ cups fresh blueberries (divided)
  • 6 oz. cream cheese (room temperature)
  • For glaze: powdered sugar and milk

Instructions

  1. Preheat your oven to 425°F (220°C) and line a cupcake pan with paper liners.
  2. Toss 3/4 cup of blueberries with 1 tablespoon of flour; set aside the remaining blueberries for topping.
  3. In a mixing bowl, combine flour, baking powder, and salt.
  4. In another bowl, whisk together sugar, egg, yogurt, oil, and vanilla until smooth.
  5. Gently fold dry ingredients into the wet mixture until just combined.
  6. Fold in floured blueberries carefully.
  7. Prepare the cream cheese filling by mixing cream cheese with sugar, cornstarch, and vanilla until smooth.
  8. Spoon muffin batter into liners, creating an indentation for the cream cheese filling.
  9. Fill each muffin center with cream cheese mixture and top with streusel crumbs and reserved blueberries.
  10. Bake for about 22-25 minutes at reduced temperature of 350°F (175°C) until golden brown.
  11. Cool before drizzling with glaze made from powdered sugar mixed with milk.
