  • 2 tablespoons honey or maple syrup
  • 1 tablespoon chia seeds or flax seeds (optional)
  • 1/4 cup frozen blueberries, thawed and drained
  • 12 tablespoons milk, dairy or non-dairy as needed
  • 1/2 teaspoon vanilla extract
  • 12 teaspoons powdered sugar (optional)
  • Fresh blueberries for garnish

Instructions

  1. Grind freeze-dried blueberries into a fine powder using a blender.
  2. In one bowl, mix rolled oats, protein powder, ground blueberry powder, and optional chia seeds.
  3. In another bowl, whisk together applesauce, softened cream cheese, and honey or maple syrup until smooth.
  4. Combine wet and dry mixtures thoroughly.
  5. Fold in thawed frozen blueberries gently.
  6. Adjust consistency with milk if too dry.
  7. Roll mixture into bite-sized balls and place on parchment-lined plate.
  8. Prepare glaze by whisking cream cheese, milk, vanilla extract, and optional powdered sugar until smooth.
  9. Chill bites for at least 30 minutes to firm up.
  10. Drizzle glaze over chilled bites and garnish with fresh blueberries.
