  • 2 tbsp olive oil
  • 1 large onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 can crushed tomatoes (14 oz)
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 tsp ground allspice
  • 1.5 cups orzo pasta
  • Grated Kefalotyri cheese (or Parmesan) for topping

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté finely chopped onion until translucent.
  2. Add cubed beef and brown on all sides.
  3. Stir in minced garlic, allspice, salt, and pepper.
  4. Pour in crushed tomatoes, tomato paste, beef broth, cinnamon stick, and bay leaves; bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for about two hours until beef is tender.
  6. Stir in orzo and enough hot water or broth to cook until al dente, stirring occasionally.
