  • 1 pound boneless skinless chicken breast
  • 1 cup low sugar BBQ sauce
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 (15 ounce) can black beans
  • 2 cups shredded red cabbage
  • 1 cup sweet corn (fresh or frozen)
  • ¼ cup finely diced red onion
  • 2 roma tomatoes, diced
  • 1 jalapeño, thinly sliced
  • 1 avocado, diced or sliced
  • Healthy Greek yogurt ranch dressing
  • Fresh chopped cilantro
  • Scallions

Instructions

  1. Place chicken breasts in the slow cooker and cover with BBQ sauce. Cook on high for 2.5–3 hours until tender. Shred and keep warm.
  2. Rinse quinoa under cold water, then combine with water in a pot. Bring to boil, reduce heat, cover, and simmer for 15 minutes. Fluff and steam off heat for an additional 10 minutes.
  3. Prepare vegetables: dice tomatoes, slice jalapeños, and chop cabbage.
  4. To assemble bowls, layer quinoa at the base followed by shredded chicken, black beans, cabbage, corn, onion, tomatoes, jalapeños, and avocado slices. Drizzle with ranch dressing and garnish with cilantro and scallions.
