  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2" chunks and onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder on a lined sheet pan.
  3. Roast sweet potatoes and onions for 20 minutes. Then, add broccoli tossed in olive oil and salt along with seasoned chicken brushed with BBQ sauce to the pan.
  4. Bake for an additional 15-20 minutes until everything is cooked through.
  5. Shred the chicken and mix with the veggies before serving warm in bowls.
