  • 1/4 cup melted coconut oil
  • 3/4 cup vanilla yogurt
  • 2 large eggs
  • 1/2 cup coconut sugar
  • 2 teaspoons pumpkin spice mix
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups whole wheat flour
  • 1/4 cup rolled oats
  • 1/4 cup chopped walnuts
  • 1/4 cup golden raisins
  • 1 medium apple (peeled and diced)
  • Juice from 1/2 small lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a small loaf pan with parchment paper.
  2. In a medium bowl, whisk together applesauce, vanilla extract, melted coconut oil, yogurt, lemon zest, and eggs until smooth.
  3. In another bowl, combine coconut sugar, pumpkin spice mix, baking soda, baking powder, whole wheat flour, and rolled oats.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in chopped walnuts and golden raisins.
  6. Add diced apple with lemon juice to the batter and mix gently.
  7. Transfer the batter to the prepared loaf pan and smooth the top.
