  • 100 g egg whites (at room temperature)
  • 100 g granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon vanilla bean paste
  • 1/2 cup unsalted butter (at room temperature)
  • 2 1/2 cups powdered sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons milk (plus more if needed)
  • 1/2 cup apple pie filling (mashed slightly with a fork, store-bought or homemade)
  • 1/4 cup white candy melting wafers
  • 2 tablespoons crushed cinnamon graham crackers

Instructions

  1. Sift together almond flour, powdered sugar, and salt.
  2. Whip egg whites until frothy, gradually adding granulated sugar until stiff peaks form.
  3. Fold the dry ingredients into the meringue gently until incorporated.
  4. Pipe batter into circles on lined baking sheets; let them rest until dry.
  5. Bake at 300°F (150°C) for 10-15 minutes until lightly golden.
  6. Cool completely before filling with vanilla buttercream and apple pie filling.
