  • 8 cups peeled and diced apples (about 6 Granny Smith apples)
  • 2 cups apple juice
  • 1 small lemon (zest and juice)
  • 1 tbsp apple cider vinegar
  • 3 tbsp pectin
  • 3 cups white granulated sugar
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg

Instructions

  1. Combine diced apples, apple juice, lemon zest and juice, apple cider vinegar, and a pinch of salt in a large pot over medium-high heat. Bring to boil; then reduce heat and simmer for 10-12 minutes until apples are tender.
  2. Stir in ground spices and pectin; return to a full rolling boil.
  3. Add sugar all at once; stir continuously for one minute until well combined. Remove from heat.
  4. Spoon into sterilized jars or follow proper canning techniques for shelf stability.
