Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham-cracker crumbs, sugar, and melted butter until combined. Press into the bottom of a springform pan and bake for 8-10 minutes.
  3. In another bowl, whisk cream cheese until smooth. Add brown sugar, sour cream, vanilla extract, and eggs one by one until combined.
  4. Pour the filling over the crust and layer sliced apples mixed with brown sugar and cinnamon on top.
  5. Bake for 35-40 minutes until set around edges but slightly jiggly in the middle.
  6. Cool in the oven for an hour with the door cracked open before refrigerating for at least four hours or overnight.
  7. For crumble topping: Mix oats, melted butter, and brown sugar; sprinkle over chilled cheesecake and bake at 375°F (190°C) for another 12-15 minutes until golden.
